Char Siu Chicken Roast Pressure Cooker Style

Juicy, sticky, sweet-and-salty char siu-style chicken made ultra fast using a pressure cooker. Tender bites loaded with flavor in every mouthful!

Main Ingredients

  • 300 g chicken thigh pieces get the fatty ones for that juicy bite
  • 1 tablespoon honey for sweet sticky finish
  • 1 tablespoon light soy sauce for salty umami depth
  • 1 tablespoon oyster sauce for savory richness
  • 1 tablespoon dark soy sauce or Kecap Manis for color and sweetness
  • 2 tablespoons brown sugar adds caramel touch
  • 2 cloves garlic pureed or grated
  • 1 inch ginger pureed or grated
  • 1 teaspoon Chinese five spice powder

  • In a large bowl, mix all marinade ingredients until glossy: honey, light soy sauce, oyster sauce, dark soy/Kecap Manis, brown sugar, garlic, ginger, and five spice.
  • Toss chicken thighs into the bowl and coat them well. Chill in fridge for at least 30 minutes or overnight.
  • Pour 1 cup of water or chicken stock into the pressure cooker. Place trivet/rack and arrange marinated chicken on top, away from liquid.
  • Seal lid, set to sealing, and pressure cook on high for 18 minutes.
  • Once cooked, do 10-minute natural release then quick release. Optional: broil chicken for 3–4 min for char.

Notes

For best flavor, marinate overnight and finish chicken under broiler for charred edges.
