In a large bowl, mix all marinade ingredients until glossy: honey, light soy sauce, oyster sauce, dark soy/Kecap Manis, brown sugar, garlic, ginger, and five spice.
Toss chicken thighs into the bowl and coat them well. Chill in fridge for at least 30 minutes or overnight.
Pour 1 cup of water or chicken stock into the pressure cooker. Place trivet/rack and arrange marinated chicken on top, away from liquid.
Seal lid, set to sealing, and pressure cook on high for 18 minutes.
Once cooked, do 10-minute natural release then quick release. Optional: broil chicken for 3–4 min for char.
Notes
For best flavor, marinate overnight and finish chicken under broiler for charred edges.
