  • 1 lbs raw shrimp peeled and deveined
  • 5 limes juiced
  • 1 cucumber diced
  • medium white onion chopped
  • 2 small tomatoes diced
  • 2 serrano or jalapeño peppers finely chopped
  • cup fresh cilantro chopped
  • 1 cup clamato juice or V8 tomato juice
  • Salt and pepper to taste
  • 1 Avocado diced

  • First up, put your raw shrimp in a bowl and squeeze in all that lime juice. Let it marinate about 15-20 minutes until the shrimp turns opaque and feels kinda firm.
  • While you wait, dice up your cucumber, onion, and tomatoes. Finely chop those peppers too for some heat.
  • Mix the veggies into the shrimp and lime bowl. Give it a good stir so everything’s evenly spread out with the juice and shrimp.
  • Add the chopped cilantro next and pour in that cup of clamato or V8 tomato juice. This is where the flavors all start to really mingle.
  • Season with salt and pepper to your liking. Taste a little and add more if you think it needs it.
  • Seal the lid with the sealing ring and cook. You can use slow release to keep those chicken taquitos tender, or quick release if you wanna speed things up. Just watch the float valve to know when the pressure’s done.

Notes

Serve with tostadas, saltines or tortilla chips. You can add a little ketchup to personal servings if you decide to use any.
