Core and thinly slice both the sweet red apple and the tart green apple. You wanna keep the slices thin so they mix up nice with the carrots.
Toss those apple slices in a big bowl with your matchstick carrots. The colors here already start looking real fresh and inviting.
In a small bowl, whisk up your dressing by mixing the lemon juice, mayonnaise, plain yogurt, honey, rice wine vinegar, salt, and pepper. Make sure it’s smooth and well blended before moving on.
Pour that creamy dressing right over your apple and carrot mix. Then toss everything gently but good so all the pieces get coated even.
Sprinkle on the crumbled feta cheese, and give it a gentle mix. You don’t wanna break up the feta too much, just coax it all together.
Add the dried sweetened cranberries last and give the whole bowl one more gentle toss. This keeps their chewy texture intact.
Pop the whole thing into the fridge for at least 30 minutes. This chill time lets all those flavors mingle and get friendly before you dig in.
