Start by putting the eggs in a pot filled with water. Bring it up to a boil then cover the pot, remove it from heat and let it sit for about 12 minutes.
While those are cooking, fill a big bowl with ice and cold water so you got your ice bath ready. After 12 minutes, scoop those eggs out and dunk them into the ice bath.
Let the eggs chill for 5 to 10 minutes to stop the cooking and make peeling easier. Once cool, peel the eggs carefully.
Slice each egg lengthwise to get those perfect halves. Scoop out the yolks and toss them in a bowl.
Mix the yolks with the neutral oil, pancetta, mayo, black pepper, and the 2 tablespoons Pecorino Romano. Mash everything up well until smooth.
Spoon or pipe the creamy mix back into the whites. Sprinkle some more Pecorino Romano on top.
Serve your delicious carbonara deviled eggs and enjoy.
