Equipment

  • 1 mixing bowl
  • 1 electric mixer optional
  • 2 cookie sheets
  • 1 parchment paper optional
  • 1 ice cream scoop or spoon
  • 1 cooling rack

Ingredients

  • 1 box vanilla cake mix 15.25 oz.
  • ½ cup vegetable oil 4 oz.
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup chocolate chips 3 oz.

Instructions

  • Preheat your oven to 350°F (175°C). Line cookie sheets with parchment paper or spray them lightly with non-stick cooking spray.
  • In a mixing bowl, combine the cake mix, vegetable oil, eggs, and vanilla extract. Mix well until all ingredients are fully incorporated and the batter is smooth.
  • Stir in the chocolate chips and red and green sprinkles until evenly distributed throughout the batter.
  • Using an ice cream scoop or a spoon, drop spoonfuls of the cookie dough onto the prepared cookie sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on the cookie sheets for about 5 minutes before transferring them to a cooling rack to cool completely.

Notes

Feel free to customize the cookies by adding other mix-ins, such as nuts, dried fruit, or different types of chips.
To make the cookies even more festive, you can use holiday-themed cookie cutters to cut shapes instead of dropping spoonfuls of dough.
Store cookies in an airtight container at room temperature for up to a week.
