Equipment

  • 1 mixing bowl
  • 1 whisk or electric mixer
  • 1 baking sheet
  • 1 parchment paper (optional)
  • 1 cookie scoop or spoon

Ingredients

  • 1 box red velvet cake mix 15.25 oz
  • 2 large eggs
  • cup vegetable oil
  • 1 cup chocolate chips or festive sprinkles
  • ½ cup powdered sugar for coating

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.
  • In a mixing bowl, combine the cake mix, eggs, and vegetable oil. Stir until well blended and a thick dough forms.
  • Fold in the chocolate chips or sprinkles until evenly distributed throughout the dough.
  • Use a cookie scoop or spoon to form balls of dough, about 1 inch in diameter. Roll each ball in powdered sugar until coated.
  • Place the coated cookie dough balls on the prepared baking sheet, leaving about 2 inches of space between each cookie.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are slightly firm but the center is still soft.
  • Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
  • For a different flavor, you can use other varieties of cake mix, such as chocolate or vanilla.
  • Feel free to add in nuts or dried fruit for extra texture and flavor.
  • These cookies are best enjoyed fresh, but they can be stored in an airtight container for up to one week.
