  • 8 large eggs
  • 16 medium pre-cooked tail-off shrimp
  • 1 tablespoon yellow mustard
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon turmeric
  • 2 tablespoons half and half or any milk
  • ¼ teaspoon salt to taste
  • 1 cup ice
  • 4 cups water

  • Pour 4 cups of water into the pressure cooker and place the eggs on a steamer rack. Lock the lid and set to seal.
  • Set the timer for 10 minutes. Once done, use slow release method for safe opening.
  • Transfer the eggs immediately to an ice bath made with 1 cup ice and cold water for 5 minutes.
  • Peel the eggs, cut in half, and remove yolks. Mix yolks with mustard, Cajun seasoning, turmeric, half and half, and salt until smooth.
  • Dice shrimp and fold into yolk mixture. Fill egg whites with the mixture and top with whole shrimp or Cajun seasoning.

Notes

These deviled eggs are best prepared just before serving to maintain their fresh texture. Feel free to customize with additional garnishes like green onions or jalapeños for extra flavor.
