This easy Cajun Sausage and Rice Skillet is the perfect easy and filling weeknight dinner, packed with plenty of smoky-spicy flavor!

  • 14 oz Andouille sausage sliced nice and thick
  • 1 tablespoon cooking oil for browning
  • 1 bell pepper diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • teaspoon cayenne pepper
  • teaspoon black pepper freshly cracked
  • 15 oz fire roasted diced tomatoes canned
  • 1 cup long grain white rice uncooked
  • 1 ½ cups chicken broth
  • 2 green onions sliced

  • Heat cooking oil in the pressure cooker over medium heat until shimmering, then add sliced Andouille sausage and brown for 5-7 minutes.
  • Add diced bell pepper and cook until slightly softened, about 3-4 minutes.
  • Stir in smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, and black pepper, coating sausage and peppers.
  • Pour in chicken broth and diced tomatoes, stir and bring to a boil. Stir in uncooked rice evenly.
  • Lock the lid, make sure the sealing ring is set properly. Cook on high pressure for 6 minutes, then do a quick release.
  • Switch to slow release, letting rice sit for 5 minutes in the cooker before fluffing with a fork and adding green onions.
