Instructions
Set pressure cooker to sauté mode and melt olive oil and butter until shimmering.
Add sausage slices and brown for 5 minutes until edges are crisp.
Add diced onion and bell peppers. Cook for 5–7 minutes until softened.
Stir in minced garlic and cook for 1 minute.
Add canned tomatoes (with juices), chicken broth, and rice to pot. Stir well.
Seal lid and cook on high pressure for 8 minutes.
Quick release pressure. When float valve drops, open lid.
Fluff rice and sausage with fork.
Let it rest covered for 5 minutes to let flavors develop further.
Taste and adjust seasoning as desired before serving.
Notes
Use smoked sausage instead if sensitive to spice. Adjust seasoning based on saltiness of Cajun blend used.
