  • 14 oz andouille sausage sliced into rounds
  • 1 medium yellow onion diced
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 3 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • 15 oz canned diced tomatoes with juices
  • 1 cup long grain white rice
  • 1 ½ cups chicken broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cracked black pepper

  • Set pressure cooker to sauté mode and melt olive oil and butter until shimmering.
  • Add sausage slices and brown for 5 minutes until edges are crisp.
  • Add diced onion and bell peppers. Cook for 5–7 minutes until softened.
  • Stir in minced garlic and cook for 1 minute.
  • Add canned tomatoes (with juices), chicken broth, and rice to pot. Stir well.
  • Seal lid and cook on high pressure for 8 minutes.
  • Quick release pressure. When float valve drops, open lid.
  • Fluff rice and sausage with fork.
  • Let it rest covered for 5 minutes to let flavors develop further.
  • Taste and adjust seasoning as desired before serving.

Notes

Use smoked sausage instead if sensitive to spice. Adjust seasoning based on saltiness of Cajun blend used.
