  • 4 fillet Salmon about 6 oz each
  • ½ lb Shrimp peeled and deveined
  • 2 tablespoon Cajun seasoning store-bought or homemade
  • 2 tablespoon Olive oil
  • 2 tablespoon Butter
  • 3 clove Garlic minced
  • ½ cup Red onion minced
  • 1 tablespoon Flour optional
  • 2 cup Fresh spinach roughly chopped

Instructions

Instructions

  • Pat salmon fillets and shrimp dry with paper towels. Season both with Cajun seasoning.
  • Heat olive oil and butter in a large skillet over medium-high heat. Sear salmon, (if skin on, cook skin-side down first), for 4-5 minutes per side, until golden and cooked through. Remove and set aside.
  • In the same skillet, cook shrimp for 2-3 minutes per side, until pink and opaque. Remove and set aside.
  • Add garlic and onion to the skillet. Sauté until fragrant, about 1 minute.
  • Sprinkle with flour if you want a thicker sauce. Stir in spinach and cook until wilted.
  • Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Bring to a simmer.
  • Stir in Parmesan and mozzarella until melted and smooth. Season with salt, pepper, and additional Cajun seasoning if desired.
  • Return salmon and shrimp to the skillet. Spoon sauce over the seafood and let simmer for 1-2 minutes to meld flavors. Serve hot, garnished with fresh parsley if desired.

Notes
