  • 1 tablespoon Olive Oil to keep your meat from sticking and add a little richness.
  • 1 lb Lean Ground Chicken stays moist
  • 1 Green Bell Pepper seeded and chopped
  • ½ Onion finely chopped
  • 1 rib Celery diced
  • ¾ cup Tomato Sauce the base that ties all the flavors
  • 1 tablespoon Brown Sugar balances spicy heat
  • 1 ½ teaspoon Cayenne to bring the Cajun fire
  • 1 ½ teaspoon Garlic Powder adds flavor
  • 1 teaspoon Ground Black Pepper plus salt and pepper to taste

  • Heat the olive oil in a big skillet over medium heat until warm enough to sizzle.
  • Add the ground chicken and cook until browned, breaking it up with a spatula, for about 5 to 7 minutes.
  • Add the chopped green bell pepper, onion, and celery. Let them soften about 5 minutes.
  • Stir in the tomato sauce, brown sugar, cayenne, garlic powder, and black pepper. Mix well.
  • Transfer the mixture to your pressure cooker, seal the lid and cook on high pressure for 10 minutes.
  • Use a quick release to let out the steam. Open carefully and stir. Serve on toasted buns or over rice.

Notes

Leftover Cajun Sloppy Joes mix can be cooled to room temperature, then stored in an airtight container in the fridge for 3-4 days. Reheat before serving.
