Ingredients
  

  • 1 medium head cabbage, chopped Approximately 1.5 lbs.
  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 3 stalks celery, diced
  • 1 bell pepper diced Any color.
  • 4 cloves garlic, minced
  • 6 cups vegetable broth or water
  • 1 can diced tomatoes 14.5 oz, with juice.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • ½ teaspoon salt To taste.
  • ½ teaspoon black pepper To taste.
  • 2 tablespoons olive oil For sautéing.

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion, and sauté for about 3-4 minutes until it becomes translucent.
  • Add the minced garlic, carrots, and celery. Sauté for another 3-4 minutes until the vegetables start to soften.
  • Stir in the bell pepper, chopped cabbage, thyme, basil, salt, and pepper. Mix well.
  • Pour in the vegetable broth or water, and add the diced tomatoes with their juice. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and let the soup simmer for about 30 minutes or until all the vegetables are tender.
  • Taste and adjust the seasoning if needed.
  • Serve hot and enjoy!

Notes

Feel free to add other low-calorie vegetables like zucchini or green beans for extra nutritional value.
This soup can be stored in the refrigerator for up to 5 days and can be frozen for up to 3 months.
Serve with fresh herbs or a squeeze of lemon for added flavor.
