Ingredients
  

  • 1 lb smoked sausage, sliced Can substitute with turkey or chicken sausage.
  • 1 medium head green cabbage, chopped About 4 cups.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt To taste.
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • to taste red pepper flakes Optional for heat.

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Once hot, add the sliced smoked sausage and cook until browned, about 5 minutes.
  • Add the chopped onion to the skillet and sauté for another 3-4 minutes until translucent.
  • Stir in the minced garlic, smoked paprika, salt, and black pepper. Cook for about 1 minute until fragrant.
  • Add the chopped cabbage to the skillet and mix well with the sausage and onion. Cook for 5-7 minutes, stirring occasionally until the cabbage wilts.
  • Pour in the chicken broth and apple cider vinegar. Bring the mixture to a simmer and cover. Cook for 10-15 minutes or until the cabbage is tender, stirring occasionally.
  • Taste and adjust the seasoning if needed. If you like the heat, add red pepper flakes to taste.
  • Serve warm, garnished with additional black pepper if desired.

Notes

You can substitute the smoked sausage with turkey or chicken sausage for a lighter option.
This dish goes well with crusty bread or over a bed of rice for extra substance.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or microwave before serving.
