Heat the olive oil in a large skillet over medium heat. Once hot, add the sliced smoked sausage and cook until browned, about 5 minutes.
Add the chopped onion to the skillet and sauté for another 3-4 minutes until translucent.
Stir in the minced garlic, smoked paprika, salt, and black pepper. Cook for about 1 minute until fragrant.
Add the chopped cabbage to the skillet and mix well with the sausage and onion. Cook for 5-7 minutes, stirring occasionally until the cabbage wilts.
Pour in the chicken broth and apple cider vinegar. Bring the mixture to a simmer and cover. Cook for 10-15 minutes or until the cabbage is tender, stirring occasionally.
Taste and adjust the seasoning if needed. If you like the heat, add red pepper flakes to taste.
Serve warm, garnished with additional black pepper if desired.
