  • 1 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter room temperature, 115 grams
  • ¾ cup sugar
  • 2 eggs large, room temperature

  • 1 tablespoon strawberry or raspberry jam for filling

Instructions

Instructions

  • Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with paper cases.
  • Sift together the flour, baking powder, and salt in a bowl to keep things airy and lump-free.
1 ¼ teaspoons baking powder, ½ teaspoon salt
  • Cream together the butter and sugar in a separate big bowl until light and fluffy.
½ cup butter, ¾ cup sugar
  • Beat in the eggs one at a time and add the vanilla extract.
2 eggs, ½ teaspoon vanilla extract
  • Alternate adding the flour mixture and milk to the wet bowl, mixing gently until just combined.
1 ¼ teaspoons baking powder, ½ teaspoon salt, ½ cup milk
  • Divide batter evenly into muffin cases, filling each about two-thirds full.
  • Bake for about 18 to 20 minutes or until a skewer poked in comes out clean.
  • Let cakes cool completely on a wire rack before moving to the next step.
  • Cut a cone shaped piece out of the top of each cake with a small knife.
  • Fill the hole with about a teaspoon of jam and dollop whipped cream or buttercream icing on top.
1 tablespoon strawberry or raspberry jam, ½ cup cream, 1 cup vanilla buttercream icing
  • Replace the cone-shaped piece over the icing to look like butterfly wings.
  • Serve fresh or refrigerate to keep fresh for later.

Notes

Serve fresh or chilled. Use the sealing ring of pressure cooker to lock in moisture and keep cakes tender. You can substitute the frosting with cream cheese frosting or store-bought jams if desired.
