  • ½ cup plain full-fat yoghurt
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric powder
  • 2 teaspoon garam masala
  • ½ teaspoon chilli powder or cayenne pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh ginger grated
  • 2 cloves garlic crushed
  • 1.5 lb chicken thigh fillets cut into bite-size pieces
  • 2 tablespoon ghee or butter or 1 tablespoon vegetable oil
  • 1 cup tomato passata
  • 1 cup heavy cream
  • 1 tablespoon sugar
  • 1 ¼ teaspoon salt

  • Mix yoghurt, lemon juice, turmeric, garam masala, chilli, cumin, ginger, and garlic in a bowl.
  • Add chicken pieces and coat in marinade. Refrigerate 30 minutes or overnight.
  • Heat ghee or butter in skillet over medium-high heat. Brown chicken for 8–10 minutes.
  • Transfer chicken to pressure cooker. Add tomato passata, cream, sugar, and salt. Stir gently.
  • Lock lid and cook on high pressure for 8 minutes. Quick release pressure when done.
  • Open lid, stir gently, and serve hot over basmati rice with fresh cilantro.

Notes

For extra flavor, marinate chicken overnight. Serve hot over rice with fresh coriander. Leftovers freeze well and reheat on low heat to prevent cream from splitting.
