- 4 large bell peppers Any color
- 2 cups cooked shredded chicken
- ½ cup buffalo sauce Adjust based on spice tolerance
- 1 cup cream cheese Softened
- 1 cup shredded cheddar cheese
- ¼ cup green onions Chopped
- 1 teaspoon garlic powder

Preheat the oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.
In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the shredded cheddar cheese, green onions, garlic powder, salt, and pepper. Mix until well combined.
Stuff each bell pepper with the buffalo chicken mixture, packing it down slightly.
Place the stuffed peppers upright in a baking dish. Cover with aluminum foil.
Bake in the preheated oven for 25 minutes. Then, remove the foil, sprinkle the remaining cheddar cheese on top, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let sit for a few minutes before serving.
