  • In a small bowl, whisk together mayonnaise, white wine vinegar, and maple syrup until the dressing looks smooth and inviting.
  • Pour that dressing straight over the broccoli mixture, then toss everything really well so each bit gets coated in the creamy blend.
  • Now here’s a little trick with the pressure cooker: you can actually steam the broccoli first for just a minute or two to soften it slightly without losing bite.
  • Pop the broccoli in the basket inside the cooker with a cup or so of water below to create that lovely broth depth. Seal it up and set your cooker to high pressure for 1 minute—yeah, barely any time at all.
  • After the timer's up, let that natural release happen slowly so flavors settle in without making it soggy.
