Season the chicken. Mix salt, pepper, onion powder, garlic powder, and paprika. Rub onto chicken breasts, then drizzle with olive oil and coat well.
Make the filling. Combine broccoli, cheddar, cream cheese, and minced garlic in a bowl and mix well.
Carve pockets in the chicken. Carefully cut a pocket in each chicken breast without going completely through.
Stuff the chicken. Spoon the broccoli cheese mixture into each pocket, being cautious not to overstuff.
Sear chicken breasts. Heat oil in a pressure cooker’s pot, sear stuffed breast until golden on both sides without cooking them through.
Pressure cook. Add broth or water to pot, lock lid, and cook for about 8 minutes at high pressure. Use quick release to finish fast.
Notes
This recipe works best with large chicken breasts. Make sure not to overstuff them to avoid mess and ensure even cooking.
