Grab a big bowl and toss the broccoli florets, cauliflower florets, chopped red onion, shredded cheddar, and pecan pieces all together.
In a smaller bowl whisk the mayonnaise with your Swerve, apple cider vinegar, and a pinch of salt and black pepper until smooth and creamy.
Pour that creamy dressing over your veg and nuts, then toss the whole thing gently.
Add the crumbled bacon in last and mix it through gently—not too much.
Cover the salad and stick it in your fridge for at least 30 minutes.
Notes
Serve cold or at room temperature. This salad works perfect as a side or a light main, packed full of texture.
