  • 1 large head broccoli cut into bite-sized florets, about 4 cups
  • 2 honey crisp apples chopped
  • ½ cup shredded carrots for a splash of color and sweetness
  • ¼ cup diced red onion adding that punch of flavor
  • ½ cup dried cranberries for sweet-tart contrast
  • cup toasted chopped pecans adding that nutty crunch
  • 2 scallions diced to sprinkle in that mild onion taste
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons apple cider vinegar or rice vinegar
  • 1 tablespoon sugar
  • ¼ teaspoon coarse salt
  • fresh cracked pepper to season

  • In a large bowl, mix together broccoli florets, chopped apples, shredded carrots, diced red onion, dried cranberries, toasted pecans, and diced scallions.
  • In another bowl make the dressing. Whisk together mayonnaise, sour cream, apple cider vinegar, sugar, coarse salt, and fresh cracked pepper.
  • Pour dressing over the salad and toss to coat.
  • Chill, covered, for at least 30 minutes before serving.

Notes

Store leftovers airtight in the fridge for up to 3 days. Quick toss before serving refreshes it.
