  • 8 ounces penne pasta cooked al dente
  • 1 tablespoon vegetable oil for searing steaks
  • 2 sirloin steaks about 8 ounces each, seasoned with ¼ teaspoon kosher salt and ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter for sauce base
  • 1 tablespoon cornstarch thickener that keeps sauce silky
  • 1 tablespoon all-purpose flour adds body to sauce
  • ¼ teaspoon kosher salt and ¼ teaspoon white pepper for gentle seasoning
  • 1 cup whole milk the creamy backbone of the sauce
  • 8 ounces blue cheese finely crumbled for max melting
  • 2 tablespoons chopped parsley for garnish
  • ¼ cup chopped walnuts for garnish

  • Cook the pasta in a large pot of boiling water until al dente. Drain and set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the seasoned steaks and sear for about 5 minutes on each side for medium-rare. Remove and rest.
  • Melt the butter in the same skillet. Add cornstarch and flour, and cook until smooth.
  • Whisk in milk gradually, stirring until it thickens. Add blue cheese, salt, and pepper. Stir until cheese melts.
  • Slice the rested steak thinly against the grain. Add to the sauce.
  • Add cooked pasta to the sauce, tossing to coat.
  • Serve pasta topped with steak slices and optional garnishes of parsley and walnuts.
