Cooking oil of choice
Olive or avocado oil recommended

Boneless, skinless chicken thighs or breasts
Thighs give more flavor but breasts work if prefer leaner meat
Kosher salt and pepper
To taste
BBQ seasoning blend
For smoky flavor

BBQ sauce
Plus more to drizzle

Burrito size flour tortillas

Shredded cheese of choice
Cheddar, Monterey Jack, or a mix recommended

Preheat griddle to medium. Add cooking oil, chicken, kosher salt, pepper, and BBQ seasoning. Cook 6 minutes, mixing a few times with spatulas.
Add BBQ sauce and hot honey. Cook 2 more minutes, mixing together.
Remove and scrape griddle clean and lower heat to medium-low.
Add more cooking oil and lay the tortillas flat on griddle.
Sprinkle half of the cheese on one side of each tortilla.
Add chicken, drizzle a little more BBQ sauce and hot honey, add cilantro if using, and remaining cheese.
Fold the empty side of each tortilla over the filled side and cook the quesadillas a minute or two per side.
Remove once the cheese is melted and the tortillas are crisped how you prefer.
Serve with sour cream and jalapenos if desired.

Serve with sour cream, jalapenos, or extra BBQ sauce. Wrap leftovers tightly and refrigerate for up to 3 days.
