Cook the cavatappi pasta according to package instructions until al dente, then quick release and drain.
Brown the ground beef in a skillet, then drain the fat.
Slice the red onion, dice the dill pickles, chop lettuce, and halve cherry tomatoes.
In a large bowl, combine pasta, beef, onion, pickles, lettuce, tomatoes, and cheddar cubes. Mix well.
Pour in thousand island dressing, toss gently, and sprinkle sesame seeds on top before serving.
