  • 8 ounces cavatappi pasta boiled and drained
  • 1 pound lean ground beef browned and drained
  • 1 cup red onion thinly sliced
  • ¾ cup dill pickles diced
  • 1 cup green leaf lettuce chopped
  • 10 ounces cherry tomatoes sliced in half
  • 8 ounces mild cheddar cheese cubed
  • 2 cups thousand island dressing
  • sesame seeds for garnish

  • Cook the cavatappi pasta according to package instructions. Use your cooker's pot if you want to keep it in one place. Once done, drain it well, then set it aside to cool.
  • Brown the lean ground beef in a skillet over medium heat. Stir to cook through. Drain the extra fat and let the beef cool.
  • In a large mixing bowl, combine the cooled pasta and ground beef.
  • Add the sliced red onion, diced dill pickles, and chopped green leaf lettuce. Mix well.
  • Add the cherry tomatoes and cubed cheddar cheese. Stir to combine.
  • Pour in the thousand island dressing and toss everything until evenly coated. Chill in the fridge for at least an hour. Before serving, sprinkle with sesame seeds.

Notes

Best served chilled. Store leftovers in an airtight container and consume within 3 days. Add lettuce just before serving for best crunch.
