  • 2 cloves Garlic minced
  • 1-2 tablespoons Chipotle chilis in adobo sauce adjust to taste
  • 1.5 cups Tomato sauce
  • 0.5 teaspoon Chipotle chili powder
  • 0.5 teaspoon Ground cumin
  • 0.75 cup Reduced sodium chicken broth
  • Kosher salt and fresh pepper to taste
  • 1 teaspoon Extra virgin olive oil
  • 10 ounces Cooked shredded chicken breast rotisserie or slow cooker
  • 1 cup Diced onion
  • 0.25 cup Chopped cilantro
  • 1 teaspoon Cumin
  • 0.5 teaspoon Dried oregano
  • 1 teaspoon Chipotle chili powder
  • 0.33 cup Chicken broth extra for sauce
  • 0.5 cup Tomato sauce extra too
  • 8 Whole wheat flour tortillas about 7 inches
  • 1 cup Shredded Mexican cheese blend or sharp cheddar
  • Olive oil spray for coating
  • 2 tablespoons Chopped scallions or cilantro for topping
  • Sour cream optional topping
  • Avocado optional topping
  • Greek yogurt or jalapenos optional topping

  • Preheat oven to 400°F. This is where that crispy cheese finish comes from later.
  • Heat olive oil in a saucepan. Add garlic and onion, cook 3-4 minutes until soft and fragrant.
  • Add chipotle chilis, tomato sauce, chipotle chili powder, cumin, chicken broth, salt, and pepper. Simmer uncovered for 8-10 minutes. Reserve ⅓ cup of the sauce.
  • In a bowl, mix shredded chicken with ½ cup of sauce to keep it juicy.
  • Spray a 9x13-inch baking dish with olive oil or spread some sauce on the bottom.
  • Warm tortillas to prevent cracking. Fill each with chicken mixture, roll tightly, and place seam side down in dish.
  • Pour remaining sauce over enchiladas. Top with shredded cheese.
  • Bake uncovered for 20-25 minutes until heated through and bubbly.
  • Let it cool slightly then garnish with scallions or cilantro and any desired toppings.

Notes

You can prepare everything in advance. To reheat, cover and warm in the oven or use a microwave with a damp towel on top. Mix up spice levels by adjusting chipotle quantity.
