  • 1 cup BEN'S ORIGINAL™ Ready Rice™ Original
  • 1 cup canned pinto beans drained and rinsed
  • ½ cup cooked chicken breast shredded
  • ¼ cup honey BBQ sauce
  • ¼ cup diced red bell pepper
  • ¼ cup diced red onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

  • Heat olive oil in a skillet over medium heat.
  • Add diced red bell pepper and red onion. Sauté for 3–4 minutes until softened and smellin’ real good.
  • Stir in the pinto beans and cook for another 2 minutes to warm those up.
  • Add shredded chicken and honey BBQ sauce. Mix well and cook until heated through, about 5 minutes total.
  • Microwave BEN'S ORIGINAL™ Ready Rice™ according to package instructions.
  • Stir the rice into the skillet mixture, fold everything evenly so each bite packs flavor.
  • Season with salt and pepper, taste and tweak till it feels just right.
  • Serve hot, garnish with chopped parsley, and enjoy that comforting aroma.

Notes

Store leftovers in an airtight container and reheat with a splash of broth to keep it moist. Freezes well too!
