- 2 large bell peppers Any color.
- 1 cup hummus
- 1 cup cherry tomatoes Halved.
- 1 small cucumber Thinly sliced.
- 1 cup spinach leaves
- ½ cup feta cheese Crumbled.

Begin by washing the bell peppers under running water. Pat them dry with a towel.
Carefully slice each bell pepper in half lengthwise and remove the seeds and membranes.
Lay the bell pepper halves on a cutting board, cut side facing up.
Spread a generous layer of hummus inside each bell pepper half using a spoon.
Start layering the fillings: add spinach leaves, cucumber slices, halved cherry tomatoes, and crumbled feta cheese into the hummus-filled pepper halves.
If using olives, sprinkle them on top of the fillings for an extra kick of flavor.
Season with salt and pepper to taste. If desired, drizzle a little olive oil over the toppings for added richness.
Place the prepared bell pepper sandwiches on a serving platter. Serve immediately, or refrigerate for a short while before serving for an even cooler crunch.
You can customize this sandwich by adding grilled chicken, turkey slices, or other preferred proteins.
Experiment with different spreads like avocado, tzatziki, or yogurt for varied flavors.
This dish is best enjoyed fresh but can be refrigerated for up to a day. Avoid sogginess by wrapping the sandwiches in paper towels if making them in advance.
