or your fave pie dough doubled (4 shells total), for wrapping it all up

Preheat your oven to 400°F.
Brown the ground beef with chopped onion in a large skillet over medium heat for 5 to 7 minutes.
Add diced potatoes, thyme, and peas to the skillet. Pour in the Guinness and Worcestershire sauce. Season with salt and pepper.
Bring the mixture to a boil, then lower the heat and let it simmer for 15 minutes until potatoes are tender and sauce thickens.
Remove skillet from heat and let filling cool slightly.
Roll out pastry on a floured surface, cut round circles, fit into pie pans, and spoon beef filling into each.
Top with another pastry circle, seal edges with a fork, and poke slits for steam. Brush with milk.
Bake in the oven for 25 to 30 minutes until golden brown.
Notes
For a more intense Guinness flavor, ensure not to rush the natural release of the pressure cooker.
