Main ingredients

  • 1 Can Black Beans rinsed and drained
  • 1 ½ Cup Corn rinsed and drained
  • 1 Bunch Green Onions chopped
  • ½ Cup Tomato diced

  • ½ to 1 Cup Cheddar Cheese optional

Instructions

Instructions

  • Cook your pasta the usual way by boiling it. Follow the package instructions but don’t overdo it. Drain it and let it cool on the side; this stops it from getting mushy in your salad after mixing.
  • Next, grab a big bowl where you’ll mix the magic. Toss in your cooked chicken, black beans, corn, green onions, and tomato. This combo of fresh and cooked sets your flavor base just right.
  • In a separate bowl, mix ranch dressing mix with sour cream and your BBQ sauce until it’s silky smooth and super tasty. This creamy dressing blends those sweet and tangy notes together real good.
  • Now pour that creamy ranch BBQ mix over your large bowl of salad base. Add in your cooled pasta. Gently toss everything up using big spoon or clean hands. Make sure every bite’s got some love.
  • Here’s where you sneak in the corn chips. Fold them in last and carefully so they keep their crunch. Nobody wants soggy chips ruining the vibe.
  • Optionally sprinkle cheddar cheese on top if you’re feeling that cheesy fix. Couldn’t hurt.

Notes

Pasta Salad Tips: Add BBQ Ranch Dressing to pasta and wait to add Frito Chips until ready to serve. Chips will become soggy and absorb all the dressing making the pasta dry.
