  • 3 tablespoon vegetable oil
  • 1 lb boneless skinless chicken breast diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • 1 tablespoon brown sugar
  • 2 cups cooked rice
  • 2 eggs
  • 3 tablespoon Japanese BBQ sauce
  • 1 tablespoon sesame seeds for topping
  • chopped scallions for topping, optional

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add diced chicken and cook for 5-7 minutes until browned and cooked through.
  • Stir in onion powder, garlic powder, red pepper flakes, and brown sugar. Coat the chicken evenly with the seasoning.
  • Push chicken to one side, add another tablespoon of oil to the empty side, and crack in the eggs. Scramble until just cooked but still soft.
  • Mix scrambled eggs and chicken together in the skillet.
  • Add the cooked rice and final tablespoon of oil. Stir to combine all ingredients thoroughly.
  • Pour in Japanese BBQ sauce and stir-fry everything together for 2-3 minutes until heated through and evenly coated.
  • Top with sesame seeds and scallions if desired. Serve hot.

Notes

Store in an airtight container in the fridge for 2-3 days. Add a splash of water or broth when reheating to retain moisture. Great for meal prep or freezing individual portions.
