Cut the chicken into bite-sized cubes and set aside in a bowl.
In a separate bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, soy sauce, garlic powder, and smoked paprika until smooth.
Pour the marinade over the chicken and stir to coat evenly. Cover and marinate in the fridge for at least 30 minutes.
Thread the marinated chicken onto soaked skewers, spacing the pieces slightly.
Spray the pressure cooker pot with oil and quickly sear the skewers until lightly charred.
Place skewers in the pot, seal the lid, and cook under high pressure for 5 minutes.
Quick release the pressure and serve hot, garnished with more chopped cilantro or green onions if desired.
