Preheat oven to 400°F and line a baking sheet with parchment paper for your churro bites.
In a saucepan, mix water, butter, brown sugar, and salt. Heat it till it boils over medium heat—watch for that float valve popping up.
Pull the pan off heat and stir in flour till dough rolls up into a ball. Wait a bit for it to cool.
Beat in eggs one at a time till dough feels smooth. Load it into a piping bag with a star tip and pipe 2-inch strips on baking sheet.
Bake those bites for 20-25 minutes till they’re golden and smell like cinnamon heaven. Meanwhile, mix sugar and cinnamon for dusting in a bowl.
Right outta the oven, toss churro bites in cinnamon sugar, then serve warm with your homemade dulce de leche dipping sauce.

For homemade dulce de leche, ensure you keep an eye on the pot to prevent it from boiling over. Serve dips warm for best taste.
