  • 16 ounces cream cheese at room temperature to keep the filling smooth
  • 1 ⅓ cup confectioners' sugar to sweeten that creamy layer just right
  • 3 tablespoons Baileys Irish cream you can go up to ¼ cup if you want it boozier
  • ¾ cup semi-sweet chocolate chips melted for rich chocolate flavor
  • 2 tablespoons Dutch-processed cocoa powder for that deep chocolate kick
  • A pinch kosher salt to balance all the sweetness
  • 2 cups whipped topping for folding into filling and extra for garnish

  • First, preheat your oven to 350°F. While that’s warming up, crush your Oreos and mix with the melted butter. Press this into your pie dish to form the base. Then, bake it for 10 minutes and let it cool down.
  • Grab a big bowl and beat the cream cheese until it’s smooth. This step is super important to avoid any lumps in your filling.
  • Slowly add your confectioners’ sugar, mixing well after each spoonful to keep things creamy and even.
  • Pour in Baileys Irish cream, melted chocolate chips, cocoa powder, and the kosher salt. Mix all this up until smooth and completely combined.
  • Very gently fold in the whipped topping — you don’t wanna knock out the air that makes the pie fluffy.
  • Now pour your creamy mix into the cooled crust and smooth out the top with a spatula.
  • Put the pie in the fridge and let it chill for at least 4 hours so it can set up nice and firm.
  • When you’re ready to serve, top with extra whipped topping and some chocolate shavings for that final touch. Enjoy!

Notes

Make sure your cream cheese is soft to prevent lumps and gently melt your chocolate chips to avoid scorching for a smooth filling.
