  • ¾ cup flour
  • cup Dutch-process cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ cup unsalted butter or coconut oil
  • 1 cup semi-sweet chocolate chips
  • 1 cup granulated sugar
  • ¾ cup Baileys Irish cream divided
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup semi-sweet chocolate chips for ganache topping
  • ¼ cup Baileys Irish cream for ganache
  • ¾ cup whipping cream for ganache

  • Preheat oven to 350°F. Grease your pan for later use.
  • Mix flour, cocoa, salt, and baking powder in a bowl.
  • Melt butter and 1 cup chocolate chips until smooth.
  • Add sugar, ½ cup of Baileys, and vanilla to the melted mixture. Whisk.
  • Fold in dry mix gently until combined, then stir in egg.
  • Pour batter into pan and level, place on trivet in pressure cooker with 1 cup water below.
  • Seal pressure cooker, cook on pressure for 25-30 minutes.
  • Quick release pressure carefully, let brownies cool in pan.
  • For ganache, melt chocolate chips with remaining Baileys and cream, pour over brownies.

Notes

Serve with a scoop of vanilla ice cream or extra ganache as dipping.
