Slice each hard-boiled egg in half lengthwise, careful with that yolk part because that’s the heart of the filling.
Pop those yolks right into a mixing bowl. Add your mayo, rice vinegar, ground mustard, and sugar.
Toss in your diced jalapenos and crumbled bacon. Mash everything together until it’s smooth.
Spoon or pipe this mixture back into the egg white halves. Sprinkle with paprika before serving.
