  • 12 large eggs hard-boiled and peeled
  • 1 cup mayonnaise
  • 1 ½ teaspoons rice vinegar
  • ¾ teaspoon ground mustard powder
  • ½ teaspoon granulated sugar
  • 2 jalapenos seeded and diced
  • 6 pieces bacon cooked crisp and crumbled
  • Paprika for garnish

  • Slice each hard-boiled egg in half lengthwise, careful with that yolk part because that’s the heart of the filling.
  • Pop those yolks right into a mixing bowl. Add your mayo, rice vinegar, ground mustard, and sugar.
  • Toss in your diced jalapenos and crumbled bacon. Mash everything together until it’s smooth.
  • Spoon or pipe this mixture back into the egg white halves. Sprinkle with paprika before serving.
  • Chill until ready to serve. Keep an eye on your cooker’s valve and steam cues for other dishes.
