Soak the cipollini onions in buttermilk for at least 30 minutes. Cover and chill or keep at room temperature.
Mix all dry ingredients: flour, garlic powder, onion powder, smoked paprika, salt, dry mustard, black pepper. Combine well.
Remove onions from buttermilk, dredge in flour mixture, coating well. Shake off excess.
Preheat air fryer to 375°F (190°C).
Lightly spray onions with oil. Arrange in a single layer in air fryer basket. Shake halfway through.
Cook for 15-20 minutes. Watch for float valve pop if using pressure cooker. Onions should be crispy and tender.
Notes
Serve hot with your favorite dipping sauce, or as a satisfying side.
