Ingredients
  

  • 1 pound ground beef (80/20 blend)
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 medium bell pepper, finely chopped
  • 1 cup mushrooms, finely chopped
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ¼ teaspoon crushed red pepper flakes (optional) Optional
  • 1 head butter or iceberg lettuce, leaves separated
  • ¼ cup green onions, chopped (for garnish)
  • ¼ cup cilantro, chopped (for garnish)

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chopped onion and sauté for 2-3 minutes until softened.
  • Stir in the minced garlic and fresh ginger, and cook for another minute until fragrant.
  • Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  • Drain any excess fat, and then add the chopped bell pepper and mushrooms. Sauté for another 3 minutes until the vegetables are tender.
  • Stir in the soy sauce, hoisin sauce, rice vinegar, sesame oil, and crushed red pepper flakes (if using). Cook for an additional 2 minutes to combine flavors.
  • Remove the skillet from heat and let the mixture cool slightly.
  • To serve, spoon the beef mixture into the center of each lettuce leaf and top with green onions and cilantro. Add chopped peanuts or cashews for extra crunch, if desired.

Notes

For a lower-calorie option, you can substitute ground turkey or chicken for ground beef.
Feel free to customize the filling by adding other vegetables like shredded carrots or water chestnuts.
Serve with additional dipping sauces like sweet chili sauce or extra soy sauce for extra flavor.
