- 1 lb salmon fillet, skinless and boneless, cut into bite-sized pieces
- ½ cup teriyaki sauce store-bought or homemade
- 2 cups cooked rice white or brown
- 1 cup broccoli florets
- 1 cup bell pepper, sliced
- ½ cup green onions, chopped
- 1 tablespoon sesame seeds for garnish
- salt and pepper to taste

In a mixing bowl, combine the salmon pieces with ½ cup of teriyaki sauce. Ensure the salmon is well-coated. Let it marinate for about 10 minutes.
While the salmon is marinating, prepare the rice according to package instructions, or use a rice cooker for convenience.
Preheat the air fryer to 400°F (200°C) for about 5 minutes.
Lightly spray the air fryer basket with olive oil. Place the marinated salmon bites in a single layer in the basket. Air fry for 8-10 minutes, shaking the basket halfway through, until the salmon is cooked through and lightly browned.
In the last 5 minutes of cooking the salmon, steam or sauté the broccoli and bell pepper until tender.
To assemble the rice bowls: Begin with a base of cooked rice. Top with air-fried salmon bites, followed by steamed broccoli and sliced bell peppers. Drizzle a little extra teriyaki sauce if desired.
Garnish with chopped green onions and sesame seeds before serving.
