Heat olive oil in a pressure cooker over medium heat.
Add celery, onion, bell pepper, and carrots. Sauté for 5-7 minutes until tender.
Stir in garlic and cook for 1 more minute until fragrant.
Pour in chicken broth and the can of diced tomatoes with all of its juice.
Add chopped cabbage, oregano, basil, red pepper flakes, black pepper, and salt. Stir well to combine.
Close the lid, set pressure cooker to high. Once float valve pops, cook 5 more minutes and then slow release.
Open lid, stir soup, adjust seasoning to taste, and serve hot.
Notes
Store leftovers in airtight containers and refrigerate for up to 3-4 days, or freeze for longer storage. Use low-sodium broth if desired.
