  • 2 tablespoons Olive oil
  • 1 cup Celery diced
  • 1 cup White or yellow onion diced
  • 1 Green bell pepper diced
  • 1 cup Carrots diced
  • 2-3 cloves Garlic minced
  • 4 cups Chicken broth
  • 14 oz Diced tomatoes with basil, oregano, garlic flavor
  • ½ head Cabbage chopped
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • ½ teaspoon Red pepper flakes
  • Few shakes Black pepper
  • ½ teaspoon Salt optional

  • Heat olive oil in a pressure cooker over medium heat.
  • Add celery, onion, bell pepper, and carrots. Sauté for 5-7 minutes until tender.
  • Stir in garlic and cook for 1 more minute until fragrant.
  • Pour in chicken broth and the can of diced tomatoes with all of its juice.
  • Add chopped cabbage, oregano, basil, red pepper flakes, black pepper, and salt. Stir well to combine.
  • Close the lid, set pressure cooker to high. Once float valve pops, cook 5 more minutes and then slow release.
  • Open lid, stir soup, adjust seasoning to taste, and serve hot.

Notes

Store leftovers in airtight containers and refrigerate for up to 3-4 days, or freeze for longer storage. Use low-sodium broth if desired.
