  • Prep asparagus by trimming ends and rinsing. Toss in bowl with olive oil, salt, and pepper.
  • Set pressure cooker with broth just covering bottom. Place asparagus in basket, seal lid.
  • Cook on high pressure for 2 to 3 minutes. Allow natural release after cooking.
  • Transfer to baking sheet. Sprinkle Parmesan and lemon zest while hot.
  • Optional: Roast in oven at 400°F for 5 minutes. Drizzle lemon juice before serving.

Notes

Roasting the asparagus after pressure cooking is optional but adds a nice texture. Substitute Parmesan with feta or goat cheese for a different flavor.
