Instructions
Start by cooking the lo mein noodles according to package instructions. Drain and set aside.
Heat 1 tablespoon olive oil in a large pan or wok over medium-high heat.
Add minced garlic and sliced onion, sauté until the onion is translucent.
Add broccoli, bell pepper, carrot, and mushrooms. Cook for 5 to 7 minutes until tender.
Add cooked noodles back to the pan. Pour in soy sauce and sugar, then toss everything together.
Stir and let cook for 2-3 more minutes until flavors meld.
Drizzle sesame oil, add ground ginger and Sriracha, then give it a final toss. Serve hot.
Notes
For an added twist, try adding fresh green onions before serving or adjust spice level by adjusting Sriracha.
