  • 2 Flatbreads or naan cooked
  • 2 tablespoons Pesto favorite type
  • 4 ounces Mozzarella fresh
  • ΒΌ cup Sun-dried tomatoes julienne strips
  • 2 tablespoons Kalamata olives sliced thin
  • 3 tablespoons Feta cheese crumbled
  • 1 teaspoon Dried oregano
  • Red pepper flakes to taste
  • Basil leaves fresh
  • 1 tablespoon Garlic minced
  • 1 Shallot sliced thin

  • Preheat the oven to 400 degrees Fahrenheit if crisping in the oven after cooking.
  • Spread 1 tablespoon of pesto on each flatbread evenly.
  • Top flatbreads with shallots and garlic slices evenly.
  • Layer on mozzarella slices, sun-dried tomatoes, and olives evenly.
  • Sprinkle feta cheese and oregano all over.
  • Place flatbreads in the pressure cooker on a trivet and seal the lid.
  • Cook under high pressure for about 5 minutes, quick release, and serve with fresh basil.

Notes

Garnish with fresh basil leaves and sprinkle red pepper flakes for an extra kick.
