Preheat the oven to 400 degrees Fahrenheit if crisping in the oven after cooking.
Spread 1 tablespoon of pesto on each flatbread evenly.
Top flatbreads with shallots and garlic slices evenly.
Layer on mozzarella slices, sun-dried tomatoes, and olives evenly.
Sprinkle feta cheese and oregano all over.
Place flatbreads in the pressure cooker on a trivet and seal the lid.
Cook under high pressure for about 5 minutes, quick release, and serve with fresh basil.
Notes
Garnish with fresh basil leaves and sprinkle red pepper flakes for an extra kick.
