Instructions
Instructions
Season your chicken cubes lightly with salt and black pepper. Remember, soy sauce got that salt, so don’t overdo it.
Heat up the olive oil in your pressure cooker pot on sauté mode till it’s shimmering.
Add the chicken cubes and brown ’em on one side for about 3 to 4 minutes. You want good color but not cooked through yet.
While that’s happening, whisk together your honey, soy sauce, minced garlic, and red pepper flakes in a small bowl.
Turn your chicken pieces over in the pot and pour the sauce right in. Stir to coat everything well then seal your pressure cooker lid.
Set it to cook on high pressure for 5 minutes, then do a natural release for 5 minutes to keep all those juices in. Open it up and get ready for that tender pull every bite delivers.
Top with chopped peanuts, herbs, and lime if desired and serve with steamed rice.
Notes
To thicken the sauce, add a cornstarch slurry (mix 1–3 teaspoon cornstarch with 1 tablespoon water) during the last 1–2 minutes. Great over rice or noodles. Store in fridge up to 3 days or freeze for later.
