Heat olive oil in a large skillet over medium-high heat.
Lightly season the cubed chicken with salt and pepper.
Add the chicken to the skillet and brown on one side, about 3-4 minutes.
Whisk together the honey, soy sauce, minced garlic, and red pepper flakes in a small bowl while chicken browns.
Turn chicken pieces over and pour in the sauce. Toss to coat and continue cooking for another 4-5 minutes.
Remove from heat and top with sliced green onions, chopped parsley or cilantro, and chopped peanuts. Add red pepper flakes if desired.
Serve with steamed rice and a lime wedge. Squeeze lime juice over just before eating. Drizzle sriracha if desired.
Notes
Thicken glaze with cornstarch slurry if needed. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 2 months. Reheat with a splash of water or broth to keep it moist.
