  • 2 teaspoons extra-virgin olive oil
  • 1 ½ pounds boneless skinless chicken breasts cut into small ½ inch cubes
  • Salt to taste
  • Black pepper to taste
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy sauce
  • 3 cloves garlic minced
  • ¼ teaspoon red pepper flakes optional
  • Sliced green onions for serving
  • Chopped fresh parsley or cilantro for serving
  • Chopped peanuts for serving
  • Lime wedges to squeeze over chicken
  • Sriracha drizzle if desired

  • Heat olive oil in your pressure cooker’s sauté mode over medium-high heat.
  • Season cubed chicken lightly with salt and black pepper.
  • Add chicken to hot oil and brown on one side for 3-4 minutes.
  • Whisk together honey, soy sauce, garlic and red pepper flakes in a small bowl.
  • Flip chicken to cook other side and pour sauce over; toss to coat evenly.
  • Seal lid, cook on high pressure for 5 minutes, then use quick release.
  • Plate chicken and top with green onions, herbs, peanuts, lime juice, and optional sriracha.

Notes

To thicken sauce, mix 1-3 teaspoons of cornstarch with 1 tablespoon of water and stir into pan in last 1-2 minutes.
Great served with steamed rice or quinoa. Leftovers store 4-5 days in fridge and can be frozen.
