A quick and satisfying vegan burrito recipe made in under 10 minutes using your pressure cooker. Loaded with refried beans, sautéed mushrooms, guacamole, pickled onions and topped with a spicy vegan mayo wrap.

Finely slice the red onion and place in a glass jar or bowl with the apple cider vinegar and top it with water to submerge. Let it pickle while prepping other ingredients.
Slice the mushrooms thinly. Heat a pan with 1 tablespoon oil, add mushrooms and smoked paprika, cooking for 5 minutes. Stir in tamari and maple syrup. Remove from heat.
Create guacamole: scoop avocado, combine with chopped cherry tomatoes and finely chopped red onion. Add lime juice, salt, pepper, and cumin. Mash to desired texture.
For the beans: dice garlic, drain beans. Heat same pan with oil, toast cumin seeds, garlic, and beans. Add 2 tablespoon water and cook 2-3 mins. Stir in spices and coriander, mash to combine.
Mix vegan mayo with Korean chilli powder in a small bowl to make spicy mayo.
Assemble burrito: spread spicy mayo on wrap, then add refried beans, guac, mushrooms and pickled onions. Roll tightly.
Serve warm and enjoy immediately.

You can prepare the components ahead of time and quickly assemble before serving. Store bean filling and toppings separately for best freshness.
