Instructions

  • Finely slice the red onion and place in a glass jar or bowl with the apple cider vinegar and top it with water to submerge. Let it pickle while prepping other ingredients.
  • Slice the mushrooms thinly. Heat a pan with 1 tablespoon oil, add mushrooms and smoked paprika, cooking for 5 minutes. Stir in tamari and maple syrup. Remove from heat.
  • Create guacamole: scoop avocado, combine with chopped cherry tomatoes and finely chopped red onion. Add lime juice, salt, pepper, and cumin. Mash to desired texture.
  • For the beans: dice garlic, drain beans. Heat same pan with oil, toast cumin seeds, garlic, and beans. Add 2 tablespoon water and cook 2-3 mins. Stir in spices and coriander, mash to combine.
  • Mix vegan mayo with Korean chilli powder in a small bowl to make spicy mayo.
  • Assemble burrito: spread spicy mayo on wrap, then add refried beans, guac, mushrooms and pickled onions. Roll tightly.
  • Serve warm and enjoy immediately.
