Main ingredients
- 8 large eggs
- 4 cups water
- 1 cup ice
- 16 medium shrimp pre-cooked
- 1 tablespoon yellow mustard
- 1 tablespoon Cajun seasoning * affiliate link
- ½ teaspoon turmeric
- 2 tablespoons half and half or other unsweetened milk*
- ¼ teaspoon salt or to taste
Instructions
Instructions
- Hard boil your eggs. I used my instant pot to make them in 15 minutes with no fuss. Otherwise, use your preferred method for hard-boiling eggs.
- Plunge eggs into an ice bath and then peel them. Cut each egg in half and carefully separate the yolk and whites.
- Add yolks to a medium size bowl. Once all the yolks are separated, add in the remaining ingredients and mix until creamy.
- If you want your egg filling creamier, add more milk but be careful not to add too much because the filling will get watery. You may also want to add more salt, just do that to taste!
- Add the yolk mixture to a Ziplock bag and cut off the corner. Use the bag to fill each half of the egg.
- Set a shrimp on top of each egg half and garnish with paprika or more Cajun seasoning.
- Garnish with diced green onion or jalapenos, as desired.
Notes
*I used this cajun seasoning (affiliate link) If you would prefer to make your own you can use the same mixture I used in the paleo baked coconut shrimp I made last week!
*I tagged this recipe paleo because if you want to omit the milk you will be totally fine, it won't be as creamy but it will still be freaking delicious. You could also do coconut cream or unsweetened nondairy milk.
