I love summer salads, but sometimes we don’t have pasta or potatoes on hand (weird I know, but it has happened to me a few times) So, I have been looking at my pantry shelves for inspiration, and I have found an absolutely delicious and super hearty wheat berry salad that is packed full of iron and protein to the max. Not to mention super hearty and flavourful.

I don’t know about you, but when mid-august starts it gets me craving fall vibes (my favourite season). It gets me thinking about pumpkin spice and heartier meals. So, I got looking through my pantry for some good crossover options for us during this questionable Fall start (It hasn’t started here yet. Not even remotely close)

There are certain grains that just feel RIGHT when the cooler weather starts. But, I don’t want to use just anything! No, let’s try something new. Wheat Berries (doesn’t have to be red wheat berries like mine)are super easy to cook and are cheap to buy as well. Especially in bulk. So, why not use up some remaining veg growing in the planters and make a delicious salad that still tastes fresh but is all hearty.

This is the best side salad. It’s seen its way onto my dinner plate with a burger and fries. It’s also a great replacement as a meal in general. It has everything you need, and more. You can add or subtract and of the extra veg, you don’t have or don’t like and put what works for you instead.
A few notes on this recipe:
* This is a personal salad, use whatever veg you have and want to use
* Dried fruits like apple and cranberries would make a very delicious addition to this salad
* Chopped nuts like walnut or cashew if you have them on hand, would give a new texture
Wheat Berry Salad (Vegan)
Ingredients
- 2 cups wheat berries
- half a red pepper
- 1 green onion
- 1 med. tomato
- 1/2 tsp dill
- 1 tsp nutritional yeast
- a pinch of salt ( more later if you desire)
- 1.5 tsp olive oil
- 1.5 tsp lemon juice
- 1/2 tsp minced garlic
Instructions
- Soak wheat Berries overnight (or for at least 4-5 hrs)
- Cook until tender in a little bit of salt and a dried bay leaf (if you have it)
- Drain and let cool
- Chop all ingredients
- Mix everything together
- Let sit if possible to let everything mingle. If not enjoy once cooled.
