When you think of breakfast, do you still think of pancakes and waffles being a weekend-only food? Because, if so, you are seriously missing out. Waffles are great every day of the week and all year round. Not to mention they are super easy to dress up and down depending on time, money and occasion.

Waffles have always had a core memory for me. Growing up, visiting my grandmother was something I always looked forward to, and when we were really lucky we got to go out to this restaurant called Big Boys. Being young and, well weird. I would get the Belgian Waffles. Big HUGE waffle piled high with whipped cream and fruit ( mainly berries if I recall). They were such a decadent treat. It was breakfast for dinner. Which didn’t happen often and when it did it was NEVER like this!

Waffles certainly aren’t the trickiest of recipes to veganize, but here at The Discount Vegan we don’t just veganize recipes we work on making them as delicious as possible with the least amount of money and ingredients.
Waffles, Simple and Vegan. Any Day of the Week
Ingredients
- 1 3/4 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp white sugar
- 2 flax eggs
- 5 tbsp veg oil
- 1 1/2 c milk
- 2 tsp vanilla extract
Instructions
- Sift together all dry ingredients
- Mix in all wet ingredients with dry,
- Heat waffle iron
- Scoop in each individual waffle as needed
A few notes on this recipe:
- You can make this gluten-free using the 1:1 ratio
- Any flavourless oil will work for this recipe.
- Use whatever milk substitute you have
- The number of waffles and scoops you will need to use will depend on your waffle iron
