There is nothing more comforting than a bowl of soup. No matter what time of the year. It’s healthy, detoxifying and DELICIOUS. If you have ten to twenty minutes to spare, why not make some homemade soup instead! It’s super easy, really cheap, and TASTY. I make this Veggie Kale soup in roughly 1-2 serving amounts, but it is so super easy to double, triple quadruple…whatever you want! This is a great soup for mid-spring or any time that you can get a good successful planter full of kale.

See here in Canada (hopefully, in America you have the same) we have our Walmart’s starting/stopping food waste by having $1/$2 trolleys that get filled with produce. They shove those bags full, and really there is nothing wrong with the produce at all. Many grocers have now been doing it for years, and it really helps the budget. So
I get HUGE bags of kale, green onions, and so many other things (have you heard of the time I got over 50 avocados, cauliflower and more for about 5-8$? That was so amazing!) that saves me a boatload of money. I rarely buy at full price! (2022 UPDATE: This is not always a guarantee anymore. You won’t always find what you want or sometimes anything at all on the carts when you go. With the world economy at the moment. These carts are incredibly bare most times I go) This is honestly one of my cheapest meals EVER! You can put more in, but I honestly love the simplicity of it and all of its flavours.
It’s about flavour and simplicity. I have had this on my stove nearly every day for about a week or so. I can’t get enough of it! It’s so incredibly hearty and delicious. Sometimes I have it for lunch and then think about it all day. I admit though, I do get a bit obsessive when I find a delicious and healthy meal to make!
Veggie Kale Soup Recipe
Notes
This soup will fill you up and warm you all at the same time. Best to eat it as often as possible and store it away for lazy or sick days.
Ingredients
- 2C Kale (frozen works as well)
- 1C Green Onion
- 2.5C Chickpeas (canned or cooked from dry)
- 1/4C Parsley
- 1/4C Nutritional Yeast
- 1 Carrot Diced
- 2C Veggie Broth (Boullien or homemade)
- Salt to taste
Instructions
- Soften carrots in a bit of water
- Add kale with a little more water to cook through
- Add your broth and salt (optional)
- Add parsley & cooked chickpeas
- Cook on Med. heat till everything is tender
- Stir in nutritional yeast
- Top with chopped green onions to serve
A few notes on this recipe:
- When available, buy veggie broth powder in bulk. Store it in an airtight container for the best bang for your buck
- Make large batches and freeze them for ready meals.
